The Exploratorium has a site called Science of Cooking, which has brittle. Here is the classic Chemistry recipe, Partial Thermal Degradation of Mixed Saccharides with Protein Inclusions or peanut brittle. The teacher’s notes at the bottom of the page convert the terms, sucrose, glucose, esters, etc into the names of ingredients, sugar, Karo syrup, margarine, etc. Does your family have peanut or tree allergies? Try Honeycomb instead.
